Many Australians love to get together and party in the great outdoors. In the warmer months, families and friends get together for a catch up BBQ celebration in the home. Usually the occasion might occur on the back of someone's birthday, or to celebrate a family member returning home from spending some time overseas or interstate. Sometimes any excuse will do. A BBQ party does require some work, and you need to be crystal clear on whether or not you would like your guests to bring a plate or not.

Red Meat
Always have some onions on hand when cooking any red meats, as well as ample bread rolls and sauces. Popular sauces on the BBQ include tomato, BBQ and mustard. Sausages (or snags) are always the hit at outdoor home BBQ parties. Otherwise, steaks are taking on a vengeance as well. Having a couple of salad dishes on the side, such as coleslaw, potato salad, bean salad, and garden salad dishes work a real treat, and they're still kid friendly dishes.

Becoming ever so popular, it is incredible (albeit eye opening) to realise that fish in particular can be cooked on high heat in only a few minutes. Fish can also be cooked on the BBQ with little preparation. It is great to cook mussels (with a beautiful tomato sauce base) in a tagine, and some prawns on a few skewers. With the prawns, ensure the tail is tucked in, so to avoid them from flipping out when on the BBQ. They only need a couple of minutes on each side. Salmon is also a lovely fish that can be cooked on the BBQ. Ensure that your salmon is laid out on a cooking sheet with foil underneath on a separate tray, in order to ensure the salmon does not stick on the BBQ. Scallops are great to cook on the BBQ with their shells still in tact.

At Night
When hosting a BBQ at night, ensure you have a bright light switched on, such as a bat light hanging near the BBQ for greater visualisation. Also have a few citronella candles burning to keep any unpleasant insects at bay.
