I recently organised an impromptu lunch date with a couple of my daughter's friends and their mums.
To minimise my time in the kitchen, I took an efficient approach to my food preparation. Here are a few tips on cost effective, easy ways to cater for a play date lunches.
1.Choose food that can be prepared before your guests arrive. This time, I decided to make two quiches. Before my daughter's swimming lesson, I combined all the ingredients, covered them with glad wrap and left them ready and waiting in the fridge for our return.

2. To minimise the washing up, I line my quiche dishes with baking paper. This makes it easy to lift the quiche out, removes any risk of it sticking to the sides of the dish and eliminates the need to clean the dish afterwards. The most clean up you'll need to do is a simple wipe over with a damp cloth.

3.I also put on some cocktail frankfurts for the kids. They were happy to have this with tomato sauce while our quiche was cooking. This meant that by the time our lunch was ready, the kids were happily playing, which gave the mum's an opportunity to enjoy a quiet lunch.
